EASY CORN CHOWDER
Creamy corn chowder is a tasty comfort food! This version tastes like it's been simmering all day on the stove, but takes less than 10 minutes to make.
INGREDIENTS
- 4 slices ready to serve bacon
- 1 (10 ¾ oz.) can cream of potato soup
- 1 cup milk
- 1 (15 oz.) can whole kernel sweet corn
- Salt, to taste
- Pepper, to taste
- Oyster crackers, optional
INSTRUCTIONS
1_ Heat the bacon for 20 to 30 seconds in the microwave; set aside.
2_ Mix the cream of potato soup, milk, corn, salt, and pepper together in a sauce pan.
3_ Break up bacon into small pieces and stir it into the sauce pan.
4_ Heat for 5 minutes or until the soup reaches a simmer.
5_ Serve with the oyster crackers, optional.
EASY GARLIC SHRIMP
Can be served alone with sides (in fact, I prefer this shrimp simply served over rice pilaf) or makes a great addition to a "surf n' turf" meal.
INGREDIENTS
- 2 pounds large cooked shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon black pepper
- 2 tablespoons garlic salt
INSTRUCTIONS
1_ Preheat the oven to 350°F.
2_ In a large bowl, toss shrimp with the olive oil, garlic salt, and pepper.
3_ Place in a single layer on baking sheet.
4_ Bake for 6-8 minutes.
