Chocolate: Semisweet chocolate chips. 

Nuts: Almonds; salted or unsalted. 

Salt: Optional, we topped with a sprinkle of coarse sea salt.


How do you make almond clusters?

First, line a baking sheet with parchment paper or a silicone mat.


Next, melt the chocolate chips using your preferred method. 


Then, stir the almonds into the melted chocolate and mix well to coat completely. 


Finally, spoon small piles of almonds onto the lined baking sheet and sprinkle with salt. Chill to set.

What kind of chocolate for chocolate almond clusters?


We like semi sweet chocolate for this, but you can play with flavors and try different chocolate combinations. White chocolate or candy bark would work as well if you want different colors.


Can I use different nuts in almond clusters?

Yes! Almonds are obviously the classic option, but you can use any of your favorite nuts, or even a mix of nuts.

Use high-quality ingredients: Choose fresh, whole almonds and good quality chocolate. The quality of the ingredients will affect the taste and texture of your almond clusters.


Toast the almonds: Toasting the almonds before adding them to the clusters can enhance their flavor. Spread the almonds on a baking sheet and toast them in a preheated oven at 350°F for about 8-10 minutes, or until they turn golden brown. Allow them to cool before using.


Stir in the almonds gently: Add the toasted almonds to the melted chocolate and gently fold them in until they are well coated. Be careful not to overmix, as it can cause the chocolate to seize or the almonds to break.

Store properly: Once the almond clusters have set, transfer them to an airtight container or a resealable bag. Store them in a cool, dry place.


Experiment with variations: Customize your almond clusters by adding other ingredients such as dried fruits, coconut flakes, or a sprinkles. You can also try using different types of chocolate, like dark, milk, or white, or colorful candy melts.


Ingredients

  • 1 package semi-sweet chocolate chips 12 ounces
  • 2 ⅓ cups almonds salted or unsalted
  • optional coarse sea salt


Instructions

1.Line a baking sheet with parchment paper or a silicone mat.


2.Melt the chocolate chips (microwave: use a microwave safe bowl and heat chocolate chips in 20 second increments, stirring between heat cycles. stovetop: melt chocolate chips over low heat, stirring constantly; double boiler can be used if desired. slow cooker: add chips and cover, set to low for 1 - 2 hours).


3.Stir almonds into melted chocolate and mix well to combine.


4.Scoop small piles of the chocolate covered almonds onto the lined baking sheet (we used a 1" cookie scoop for pictured clusters). Sprinkle with salt, if desired.


5.Allow to set in a cool dry place, or move to the refrigerator for 15 - 20 minutes to set quickly.


Storage

How long does almond cluster candy last?

These will keep up to two weeks when kept at room temperature in a cool dry place and in a sealed/air tight container. 


Can you freeze chocolate almond clusters?

Yes! To get a jump on holiday treats feel free to freeze these.  Wait until after they’re set then add to a freezer safe air-tight container.


Defrost in the refrigerator or at room temperature. I prefer to defrost in the refrigerator and then move to room temp to limit the amount of condensation that may collect as they thaw.
