CREAMY CHICKEN MARSALA


A classic Italian-American chicken recipe includes tender, pan seared chicken cutlets, & deliciously browned mushrooms, thats all covered with a rich seasoned Marsala wine, garlic & herb sauce with cream & a touch of honey to help balance the acidity of the wine.



PREP TIME - 15 Mins.

COOK TIME - 30 Mins.

TOTAL TIME - 45 Mins.

SERVES - 4



INGREDIENTS


CHICKEN:

  •  1/2 cup all-purpose flour 
  •  1 teaspoon salt
  •  1 teaspoon granulated garlic
  •  1/2 teaspoon pepper
  •  2 large boneless skinless chicken breasts, halved horizontally ( will make 4 fillet’s)
  •  2 tablespoons olive oil, divided
  •  4 tablespoons butter, divided



INGREDIENTS 


MARSALA SAUCE:

  •  1 tablespoon butter as needed
  •  8 ounces Cremini or White Button     mushrooms SLICED
  •  4 cloves garlic CHOPPED
  •  3 TBSP CHOPPED Shallot
  •  3/4 cup dry Marsala wine
  •  1 1/2 cup chicken broth (or stock)
  •  1 TBSP Honey (OPTIONAL)
  •  1 cup heavy cream
  •  2 tablespoons fresh CHOPPED or dried parsley



INSTRUCTIONS 

1_ Heat 1 tablespoon oil and 2 tablespoons butter in a 12-inch pan or skillet over medium-high heat.


2_ Mix the flour, salt, garlic powder and pepper in a shallow bowl. Dredge chicken in the flour mixture and shake off excess.


3_ Fry chicken breasts until golden brown on both sides (roughly 3-4 minutes per side). 


4_ Transfer to plate, tent with foil to keep warm.


5_ In the same pan with remaining pan grease from the chicken


6_ Melt 1 TBSP of butter.


7_ Add  mushrooms & shallots and cook for 2-3 minutes until browned, scraping bottom of pan to release particles stuck to the bottom.


8_ Add garlic and cook until fragrant (Roughly 1 minute.)


9_ Pour in the Marsala wine, chicken broth or stock & (Honey OPTIONAL)


10_ Simmer until reduced by half & starting to thicken, (roughly 10-15 minutes).


11_ Pour in the Heavy cream & return chicken back into the sauce. 


12_ Reduce to Low-Medium heat & Cook until the sauce thickens (about 5-10 minutes). 


13_ Garnish with chopped parsley & remove from heat.


14_ Serve immediately. (Sauce will continue to thicken while off the heat.)


15_ Serve over pasta of choice, rice or potatoes.
